Inspired by the rich culinary tradition of home-style Mediterranean cooking, Medley: Modern Mediterranean is here to show that healthy food doesn’t have to be boring or bland. Offering grab-and-go meals, the new kid on the Bonifacio High Street block is serving up fresh and nourishing flavors soon.
“Mediterranean food is a way of life,” says Medley founder, David Tweg. “We would love for people to discover the joy of eating freshly-made food that does not sacrifice flavor - along with the benefits of the herbs and spices that are staples in Mediterranean cooking.”
Medley started as a small kiosk at the Legaspi Sunday Market, where Israel-born David Tweg and his father, Michael, offered Mediterranean snacks to local market-goers. As more and more people fell in love with the fresh flavors he offered, David saw an opportunity to share his love for Mediterranean food with the rest of the metro. He conceptualized Medley, a Mediterranean restaurant with a modern twist—featuring dishes that bring back memories of his childhood while incorporating the on-the-go lifestyle of today’s urban dwellers.
David and his father, Michael Tweg, had previously won over the taste buds of locals in El Nido, where they operated a 24/7 falafel shop, as well as charmed weekend market-goers in Legaspi Village through a humble stall that sold homemade Mediterranean snacks. Seeing the reception their family recipes received encouraged David to conceptualize Medley and turn the spotlight on Mediterranean food - regarded as one of the healthiest cuisines in the world.
Through its modern grab-and-go concept, Medley: Modern Mediterranean offers a miscellany of tastes and textures inspired by traditional home-style Mediterranean cooking. Valuing authenticity and freshness, we make use of only the finest ingredients sourced directly from local farms and suppliers. Every dish we serve is made-to-order and can be customized according to the diner’s preferences.
Bursting in color, flavor, and nutrients, our dishes do not just excite the senses, but also nourish the body. Every ingredient is prepared fresh daily - with no preservatives or artificial flavorings. They make sure that they have options for meat lovers, vegetarians, and vegans - and their salads, sandwiches, and bowls are customizable to fit everyone’s preferences. They also offer different proteins, which you can pair with classic or premium sides, and choose to have over rice, salad, or with hummus and pita. Medley believes that everyone deserves to enjoy the Medley experience the way they envision it: healthy, fresh, and delicious.
Every Medley sandwich, bowl, and pizza is prepared fresh daily and made with no preservatives or artificial flavors. Medley hopes to showcase Mediterranean cooking in an accessible and convenient setting - made available to those craving for wholesome and healthy meal options, served fresh in less than fifteen minutes.
To replicate the real flavors of the Mediterranean in the Philippines, Medley makes use of only the freshest ingredients sourced directly from local farms and suppliers. Every dish is also made-to-order, if not prepared on-the-spot for the customer to see.
“I think Filipinos who already love Mediterranean cuisine will enjoy the authentic tastes of our Beef Kofte topped on their choice of salad, Mediterranean rice, or hummus. Those who are still a bit unfamiliar with our food can start with our offerings that feature more familiar flavors like the Seared Tuna Sashimi and our pizzas,” suggests David.
Medley also offers vegetarian and vegan dishes such as David’s personal favorite: Falafel Crunch Bowl -made with falafel that’s crispy on the outside and moist on the inside, tabbouleh*, fried eggplant, beet salad, and tahini sauce - which diners can opt to take with either rice or hummus and a pita bread.
True to its name, Medley offers a variety of tasty but wholesome Mediterranean dishes such as beet salad, baba ganoush, hummus, and tabbouleh. Customers can also customize their order by changing classic ingredients for more premium sides, switching up sauces, or adding more protein. Through customization, diners can experience modern Mediterranean flavors more comfortably - creating familiarity with each meal.
“Building Medley’s identity as a health-focused fast casual restaurant without alienating people who associate healthy eating with blandness or lack of flavor is a true challenge for us,” he admits. “We hope to achieve that by offering dishes people can already identify with, just prepared in a healthier, more wholesome way.”
